- 1 1 2 tablespoons olive oil
- 4 french trimmed lamb shanks
- 2 red onions thinly sliced
- 2 garlic cloves crushed
- 1 tablespoon middle eastern spice mix
- 425g can crushed tomatoes
- 1 cup massel beef stock
- 400g can chickpeas drained rinsed
- 80g baby spinach leaves trimmed
- 4 cups massel salt reduced chicken style liquid stock
- 1 cup fine polenta
- 30g butter
- salt to season

- preheat oven to 170u00b0c heat 1 tablespoon oil in a large frying pan over high heat add lamb shanks cook turning for 5 minutes or until browned transfer to an ovenproof dish
