The ingredient of Fragrant Lamb Shanks With Apricots
- 1 1 2 tablespoons rice bran oil
- 4 300g each french trimmed lamb shanks
- 1 cinnamon stick
- 3 cardamom pods bruised
- 1 teaspoon cumin seeds
- 1 medium brown onion chopped
- 4 garlic cloves chopped
- 4cm piece fresh ginger peeled grated
- 2 red birdseye chillies finely chopped
- 1 tablespoon ground turmeric
- 2 teaspoons garam masala
- 1 2 teaspoon ground coriander
- 1 teaspoon sea salt
- 400g can crushed tomatoes
- 1 2 cup tamar valley greek style yoghurt
- 6 large 480g fresh apricots quartered
- steamed basmati rice to serve
- fresh coriander sprigs to serve
The Instruction of fragrant lamb shanks with apricots
- heat 1 tablespoon oil in a large heavy based saucepan over medium high heat cook shanks in batches turning for 5 minutes or until browned transfer to a plate add remaining oil to pan add cinnamon cardamom and cumin cook stirring constantly for 1 to 2 minutes or until fragrant add onion cook stirring constantly for 3 to 4 minutes or until softened
- add garlic ginger and chilli cook stirring constantly for 1 to 2 minutes or until fragrant add turmeric garam masala ground coriander and sea salt cook stirring constantly for 1 minute or until fragrant add tomatoes and 1 cup cold water stir to combine add yoghurt 1 tablespoon at a time stirring after each addition until combined return shanks to pan bring to the boil reduce heat to low simmer covered for 1 hour 30 minutes or until lamb starts to become tender
- turn shanks simmer covered for 1 hour 30 minutes or until lamb is falling from the bone transfer shanks to a plate cover to keep warm
- increase heat to medium simmer sauce for 10 minutes or until slightly thickened add apricots stir to combine simmer for 10 minutes or until apricots are tender and sauce has thickened serve shanks with rice and sauce topped with coriander sprigs
