The ingredient of Fajitas
- 8 flour tortillas
- 2 teaspoons olive oil
- 500g beef rump steak thinly sliced across the grain
- 1 medium brown onion halved thinly sliced

- 2 teaspoons mexican mild spice powder
- 80g 1 cup coarsely grated cheddar
- 1 ripe avocado halved stone removed peeled thinly sliced
- tomato corn salsa
- 2 corn cobs husks and silks removed
- 2 ripe tomatoes finely chopped
- salt freshly ground black pepper
The Instruction of fajitas
- to make the tomato corn salsa cook the corn in a large saucepan of salted boiling water for 5 minutes or until tender refresh under cold running water drain well use a small sharp knife to cut down the length of the corn cobs close to the cores to remove the kernels place the corn in a medium bowl
- add the tomato to the corn and gently toss until just combined taste and season with salt and pepper set aside until required
- preheat oven to 160u00b0c wrap the tortillas in foil place in preheated oven for 10 minutes or until heated through remove from oven
- meanwhile heat oil in a large frying pan over high heat add beef and cook stirring for 2 3 minutes or until brown all over transfer to a heatproof bowl add onion and capsicum to the pan and cook stirring for 5 minutes or until onion softens add beef barbecue sauce and mexican spice powder and cook stirring for 1 minute or until heated through remove from heat and set aside
- place beef mixture cheese and salsa in separate serving bowls place tortillas and avocado on serving plates allow kids to assemble and roll their own fajitas
