- combine yoghurt garam masala turmeric ginger chopped coriander and lemon juice in a small bowl season rub yoghurt mixture all over lamb place lamb in prepared dish cover the pan with foil roast for 3 hours or until very tender increase oven temperature to 240u00b0c roast uncovered for a further 20 mins or until golden brown set aside covered for 15 mins to rest
